Tortilla Pizza

Super easy meal for the mid-week craziness.

A word to the wise regarding tortillas: Many store bought tortillas are LOADED with additives. We buy our tortillas from a local Mexican Grocer in the Pittsburgh area {Renya}. Find a local Mexican grocer in your area, or purchase your tortillas from a natural food store to lessen the funktastic-ness. 

What you'll need:

Red Sauce (make your own in big batches and freeze, or look for a jarred red sauce without added sugar)
Shredded cheese of choice, right from the block
Variety of toppings {think spinach, mushroom, olive, artichoke, red onion....)

Preheat oven to 350*

Saute desired veggies in a large pan with a drizzle of olive oil until cooked through. 

Place tortillas on a baking sheet. Spread evenly with red sauce. Top with cooked veggies. Then, sprinkle with cheese.

Bake for 8 minutes, or until cheese is melted and edges are browned.

Enjoy. No guilt required.
