Vegetarian Tacos

We could eat everything in a corn tortilla. We don't, but we could.


What You'll Need:

1 onion, chopped
1 pepper, any variety, chopped

1 can black beans, rinsed and drained
1/2 tsp cumin
1/2 tsp chili powder
1/2 tsp sea salt

6 corn tortillas
fixins (think avocado, Greek yogurt, diced tomato, cilantro, hot sauce)


Sautee pepper and onion in a large frying plan with a drizzle of olive oil until tender.

Add beans and spices. Toss to coat. 

If you have a gas range: Torch the tortillas on each side over high heat. (Set tortilla directly on flame; 30 seconds each side yields a perfectly crispy, chewy tortilla.

Build tacos with filling and fixins. 


Serves 2 hungry people. Or, a set of 3 not-as-hungry people
