Yogurt and Almond Biscuits

There is something about a crumbly, buttery biscuit. As much as I love them, it's not something that I kept as a menu staple...until now....!

What You'll Need:

1 c almond flour/almond meal
1 c whole wheat flour
1 Tbsp baking powder
1 tsp baking soda

4 Tbsp cold coconut oil

7/8 c lowfat or full fat plain yogurt

Preheat oven to 450*

In a large mixing bowl, mix dry ingredients well.

Drop coconut oil into the mix by the Tablespoon. Using dry hands, rub dry ingredients and oil between your fingers, creating crumbly bits. 

Use a large spoon to stir in yogurt.

Drop large spoonfuls of batter onto an un-greased baking sheet. Bake for 7-9 minutes, or until golden brown. Great served right from the oven, or at room temperature for later.

Makes 1 dozen-ish biscuits. Freezes well.
