Corn & Edamame Succotash

Trader Joes makes a frozen variety--this is way better.  

What you’ll need:

1.5 c organic shelled edamame

2 c corn, cut from the cob

½ shallot, minced

1 sweet bell pepper, chopped

Juice of 1 lime

1 Tbsp olive oil

2 Tbsp rice wine vinegar

Himalayan salt, to taste

Steam edamame and corn for 3-4 minutes, or until tender-crisp.  Toss with remaining ingredients.
