Lentil Lime Salad

If you don't eat lentils, you should start.  

½ c lentils

2 medium carrots, chopped

½ c cilantro, chopped

3 tsp sesame oil

½ tsp cumin

½ tsp himalayan salt

Juice of 1-2 limes (start with one, taste test, and add more if desired)


Cover lentils with water. Bring to a boil and then simmer until tender (about 15 minutes). Drain.

Toss with remaining ingredients.  Easy peasy.


Serves 2 as a main, 4 as a side.
