You know, a falafel waffle. It creates a super light, savory waffle fit for a king. Or queen, obvi.
What You'll Need:
2 Tbsp olive oil
2 large shallots
1 Tbsp fresh thyme
4 garlic cloves
1/2 c dry white wine
1/2 tsp sea salt
1/2 tsp black pepper
1 pint cherry tomatoes
3/4 c chickpea flour
1 large egg yolk
1 Tbsp cider vinegar
1 tsp baking power
1 large egg white
Heat olive oil in a frying pan over medium heat. Meanwhile, combine shallot, garlic and thyme in a small food processor, or mince by hand. Saute in heated pan until aromatic.
Add wine, salt, pepper and tomatoes to the pan. Allow to cook until liquid i reduced by half.
Meanwhile, separate egg yolk from white. In the yolk bowl, add flour, vinegar and baking powder. Stir to mix.
Using an electric mixer, whip egg white until it is firm and makes peaks. If you don't have a handmixer, I am sure it would be fine to just mix it all together. A fluffed egg white will definitely yield a fluffier waffle. So, food for thought ;)
Heat greased waffle iron. Scoop 2/3 c batter at a time. Top cooked waffles with white wine goodness.
Makes 3-4 Belgian style waffles.
