Crustless Ricotta Quiche

Just wait until you taste this.

What You'll Need:

1 1/4 c ricotta cheese
3/4 c unsweetened almond milk
1 Tbsp dijon mustard
3 oz grated hard cheese
salt & pepper

1 c peas, thawed and patted dry
1/2 c parsley, chopped
1 bunch green onions, chopped

coconut oil

Preheat oven to 325*

Meanwhile, grease a standard pie pan with coconut oil. Layer green veggies and herbs in pan.

In a large bowl, mix remaining ingredients. Pour over veggies.

Bake 35-40 minutes, or until a toothpick comes out clean from the center.

Perfect served with a green salad for any meal.
