Quinoa Bowl with Seeds and Sprouts

What You'll Need

For the salad, combine:

1 c cooked quinoa
1 Tbsp olive oil
juice of 1 lemon
1 pint cherry tomatoes, halved
1 cucumber, chopped
handful kalamata olives, halved
handful fresh parsley, chopped
2 Tbsp fresh mint, chopped

Serve over:

fresh salad greens
alfalfa sprouts
roasted, unsalted pumpkin seeds

With 2 Tbsp Greek dressing:

1/2 olive oil
1/4 c red wine vinegar
1 Tbsp balsamic vinegar
juice of 1 lemon
2 tsp oregano
1 clove garlic, crushed
1 tsp dijon mustard
1/2 tsp Himalayan salt
2 Tbsp chopped fresh parsley.


Make the dressing and quionoa salad ahead of time. Serve over greens before enjoying!

Serves 2 as a main, 4 as a side.
