Super easy, light weeknight meal. Do pasta on the side for those who want it!
What You'll Need:
4 c veggies, any variety (think spinach, broccoli, cauliflower, carrots...)
Marinara (make your own, or opt for a store bought brand without added sugar)
Shredded parmesan, or other hard cheese
Crushed red pepper
Preheat oven to 350*
Meanwhile, lightly steam veggies on the stovetop. Drain.
Transfer veggies to a casserole dish, to with red sauce, cheese and peppers. Bake for 10-12 minutes, or until cheese melts.
Serves 2. Easily doubled or even tripled to feed more bellies.
