Pumpkin Spice Oats

Inspired by fall.

What You'll Need:

1 c rolled oats 

1 c unsweetened almond milk, or milk of choice 

1/2 c pumpkin puree, canned or roasted 

2 tsp real maple syrup

1/2 tsp cinnamon

dash of salt

desired toppings (think any combination of chopped apples, walnuts, pepita, coconut shreds, another little drizzle of maple syrup...)


Combine milk and oats in a saucepan.  Bring to a boil, lower to simmer.  Stir in pumpkin, syrup, spices.  Cook longer for firmer oats, less time for not-so-firm oats!  Top with desired goodies and enjoy.

*You could totally make these overnight by layering ingredients in 2 quart size mason jars.  Prepare the evening before, reheat, and enjoy!


Fills 2 perfect bellies.
