OMG. You have to eat these. Inspired by Carrie Holcomb's recipe in Easy Vegetarian Dinners

What you need for the lentils:
1 3/4 c water
3/4 c dried lentils
1/4 c chopped onion
handful chopped cilantro
1/2 tsp salt
1/2 tsp cumin
1 clove garlic, minced

Bring all ingredients to a boil. Reduce heat and simmer for 15 minutes or so, or until most of the water is absorbed. Mash.

What you need for the tostadas:
Mixed veggies, sautéed until tender (pictured here is broccoli, spinach, peppers, tomato)
Corn tortillas
Shredded cheese (best right off the block)

Preheat broiler. Place tortillas on a baking sheet. Spread with mashed lentils, top with cooked veggies and cheese. Pop under broiler for a 2 or 3 minutes. Top with additional goodness you have on hand (plain greek yogurt, cilantro, salsa, avocado....get creative here.)

Whip out the steak knife for this one and ENJOY!

Makes about 6 tostadas.
