Honey Strawberry Quinoa

It's just about the season for strawberries, y'all. Put this dish on your menu between now and the time the season is over. You will be thankful you did.

What you'll need:

2 c quinoa
1 16 oz package (standard) strawberries, sliced
3 green onions OR a handful of fresh chives, chopped
1/4 c dried cranberries
handful toasted whole or silvered almonds
zest of 1 lime (a fine cheese grater works fine here--no need for anything fancy)

4 tbsp. olive oil
juice of 1/2 lime
3 tbsp. honey
1/4 tsp cinnamon
1/4 tsp chili powder
1/4 tsp salt
1/4 tsp pepper

Cook quinoa with 3 c water: Bring to a boil, then lower heat and simmer until liquid is absorbed.

Meanwhile, prep other ingredients in section 1 and toss into a large bowl. Feed strawberries to your baby to keep them occupied while completing this task. You will end up being about 5 berries short--but who's counting?

Then, mix ingredients from section 2 for the dressing. Wisk.

Combine cooked quinoa, bowl of goodness, and dressing. Best if you allow flavors to marry for 20-30 minutes before serving. 

Serves 4 as a main, closer to 8 as a side.
