Mediterranean Inspired Zucchini Boats

When giant zucchini come your way, stuff them!


What you'll need:

1 giant zucchini or 2 medium zuchs will do

1 c cherry or grape tomatoes, halved
1/2 c kalamata olives, halved
1/2 purple onion, finely chopped
3-4 oz feta cheese, crumbled
1 tbsp fresh oregano

red wine vinegar
olive oil

Bring a large pot of water to a boil. Preheat oven to 350*

Meanwhile, heat ingredients from section 2 in a frying pan with a little bit of olive oil. 

Prepare ingredients from section 2 in a medium size bowl. Drizzle with red wine vinegar and olive oil.

Once water is boiling, pop zucchini in for 5-10 minutes. Drain, rinse with cool water. Scoop seeds out with a spoon, creating little boats.

Stuff zucchini boats with all the goodness you have prepared. Bake uncovered for 10-12 minutes, or until cheese is melted.


Serves 2-4, depending on how many you stuff. You'll be glad you did.
