Sausage and Greens Soup

We're talking vegan sausage here, people. If there is one thing I miss as a veggie, it is sausage. We love vegan sausage, and treat ourselves to it a few times each month. This soup is TO DIE FOR.  A must try.

What you'll need: 

1 onion, minced
3 cloves garlic, OR 5-6 garlic scapes, minced

3 c veggie broth
2 c water
1 sweet potato, diced
salt and pepper to taste

1 large bunch kale, or other hearty green, chopped

3 vegan sausage links (Field Roast and Tofurky both make great varieties)

Saute ingredients from section 1 with a little bit of olive oil.

Once aromatic, add ingredients from section 2. Bring to a boil, then lower to a simmer for 15 minutes.

Add kale. Cook for 10 additional minutes, allowing greens to cook down.

Add sausage. Simmer on low for another 10 minutes or so.

Serve with a light salad or crusty bread. Your belly will thank you!
