Girl Scout Potatoes

 

Potatoes have a bad rap. As long as you stay away from the deep frier, one serving will provide a powerful punch of antioxidants and nutrients. Here is one of our favorite recipes to toss on the grill.

What you'll need:


6 small-medium sized potatoes, any variety, sliced into thin rounds
2 garlic scapes, chopped OR 1 clove garlic, minced
1/2 onion, minced

1 fresh sprig rosemary, finely chopped
4 tsp coconut oil
sea salt and fresh ground pepper to taste

Heavy duty aluminum foil

Layer ingredients from section 1 onto a sheet of heavy duty aluminum foil {don't waste your time with the cheap stuff here, or you'll lose the goodness on the coals}. Top with ingredients from section 2. Fold in the edges of the foil, creating a nice little pocket. Double wrap from the opposite side using another sheet of foil to ensure that everything stays tucked inside.

These take about 40 minutes on a hot grill. Keep them on while you are cooking up the rest of your meal, turning once!
