Vegan Stuffed Peppers

These are a favorite for us when banana peppers are in season. We love the traditional version with red sauce and mozzarella, but it is always fun to put a twist on the original.


What you'll need:

-2 vegan sausage links (Tofurky and Field Roast both make great varieties), sliced lengthwise

-2 peppers (banana, pasilla, poblano, or sweet, whatever you have on hand!), sliced lengthwise and seeded

-1 small bunch greens (swiss chard, kale, spinach), chopped

-2 cloves garlic, chopped

-1 ripe avocado


Preheat oven to 350*

Braise greens and garlic in a large saucepan with 2 inches of water. (Cook until wilted) Drain.

Stuff peppers with braised greens. Top with sausage. Arrange on a baking dish and cover with foil. Bake 15-20 minutes covered.

Top with sliced avocado. Serve with a big green salad or fried eggs.
