Southwest Inspired Quinoa Bowl

Flavors of summer are bursting here.  Perfect to take to a picnic, or to have in the fridge for lunch throughout the week.  

What You'll Need:

1 can black beans, drained and rinsed

2 c corn, frozen, or cut right from the cob

large handful fresh cilantro, chopped

1 1/2 pints cherry  tomatoes, halved 

1 avocado, cubed

3 c cooked brown rice and/or quinoa 

4 garlic scapes, chopped (green onions or chives work well here, too!) 

1 tsp garlic power

1 tsp chili powder

1/2 tsp cumin

1/2 ts salt

For the dressing:

juice of 1 lime

2 Tbsp white wine vinegar

1 1/4 tsp dijon mustard 

1/3 c olive oil

Combine all ingredients for salad.  Top with mixed dressing.  ENJOY!
