Falafel

We have been looking for a go to falafel recipe for a while.  Most are labor intensive—this one is not.  It takes about 10 minutes to throw together, and is amazing topped with a little bit of Greek yogurt, fresh mint and a side of tabbouleah

What You’ll Need:

1 can chickpeas, rinsed and drained

3 cloves garlic

3 pitted dates

½ c tahini

½ c fresh parsley

Zest of lemon

1 tsp salt

1 tsp cumin

1 tsp coriander seed

And, if you like a kick, ½ tsp cayenne

 Preheat oven to 350*

 Combine all ingredients in a large food processor.  Puree until smooth. 

 Make 4 patties, lacing on a greased baking sheet as you go.  Bake for 15 minutes.  Serve topped with plain Greek yogurt, fresh herbs, and a side of tabbouleh.
