Southwest Inspired Zucchini Bake

It’s what you do when you plan to have stuffed zucchini, but don’t feel like stuffing the zucchini.

What you'll need:

1 giant zucchini, sliced into rounds, then quarters

1 can black beans, drained and rinsed
2 ears corn, cut from cob
1 tsp chili powder
1 tsp cumin
cracked pepper

2 tomatoes, chopped (or 1 pint cherry tomatoes, halved)
1/2 c cilantro, chopped

1 fresh jalapeño, sliced
sharp cheddar cheese, shred from the block


 Sauté zucchini with a little bit of olive oil until tender, toss with other ingredients. Top with a little cheddar cheese, bake at 350* for 10 minutes.
