Vegan Summer Lentils

Inspired by the first cleanse, and some fresh summer peaches. 

 

1 c dried lentils  

1 fresh peach, diced
1 c zucchini, diced
1 c cucumber, diced
1 c carrot, diced
1/2 c fresh basil chopped
1/2 c green onion OR chive

For the dressing:
1/2 tsp cumin
1/2 tsp turmeric
1 Tbsp ginger, minced
1 clove garlic, minced
Juice of 1 lime
1/4 c olive oil
1/2 tsp sea salt

Cover lentils with water. Bring to a boil and then simmer until tender (about 15 minutes). Drain.

Whisk together dressing in a small bowl.

Combine salad ingredients in a large bowl. Add lentils. Toss with dressing. Boo-yah.

Serves 4 as a main, 6-8 as a side. 

*When peaches are not in season, replace it the peaches with pineapple, and the basil with cilantro*
