Inspired by the most beautiful summer tomatoes.
What You’ll Need:
1 summer tomato, diced
Handful fresh basil, chopped
Parmesan, or other hard cheese, shredded from the block
1 tsp coconut oil
Salt and pepper
Melt coconut oil in a hot skillet. Add tomatoes. Cook for 5 minutes or so, or until most of the juice has boiled out.
Add eggs, salt, pepper. Scramble.
Stir in basil once cooked, remove from heat.
Top with cheese and ENJOY yoself.
