BBQ Bean Tacos with Mango Salsa

Can I get a what-what!!  Get ready for a fiery punch.  With homemade BBQ sauce, sweet & spicy salsa, and fresh corn tortillas, these bad boys are a win.  Not into beans?  Sub your favorite animal protein.  

What You'll Need for the BBQ Sauce:

1/2 onion

3 Tbsp tomato paste

4 cloves garlic

4 chipotle peppers in adobo sauce + 1 Tbsp of the sauce

1/4 veggie broth or water

1 Tbsp coconut sugar (light brown sugar or sugar in raw work here, too)

1 Tbsp real maple syrup

1 tsp tamari (soy sauce or liquid aminos work here, too)

For the filling:

2 cans kidney beans, rinsed and drained 

For the salsa:

1 c mango, minced 

1/2 c cilantro, chopped

1/2 fresh jalapeno, minced 

 

1 avocado, sliced

8 corn tortillas


Combine ingredients for BBQ in a food processor.  Pulse until smooth.  

Pour sauce into a large saucepan, add beans.  Heat on low to warm.  

Meanwhile, combine ingredients for salsa.  

*Tip: if you have a gas range, pop your corn tortillas directly on high flame for a few seconds on each side. It will create a crunchy and chewy combination that is heavenly. 

Build tacos, starting with tortilla, followed by sliced avocado, BBQ beans, salsa.
