Lentil and Spinach Stuffed Zucchini

Stuffed zucchini are basically the bomb.  You'll love this spin!  

What You'll Need:  

1/2 c dry lentils

2 tsp olive oil

2 c spinach

1 c marinara (try my fave here)

1/4 tsp red pepper flakes 

salt and pepper 

1/2 c shredded cheese, right off the block 

2 medium zuchinni, sliced lengthwise 


Bring a large pot of water to a boil. Preheat oven to 350*

Slice zucchini in half lengthwise.  Bring water to a boil, pop zucchini in for 5-10 minutes. Drain, rinse with cool water. Scoop seeds out with a spoon, creating little boats.  

Meanwhile, heat sauce in a medium saucepan, .  And, cook lentils in salted, boiling water until tender. (about 20 minutes) Add spinach for the last minute for so to wilt, then drain.  Salt and pepper to taste.  

Stuff zucchini boats with all the goodness you have prepared (lentils, spinach, sauce)


Top with shredded cheese.  Bake uncovered for 10-12 minutes, or until cheese is melted.


Serves 2.
