A few months back, in an attempt to heal from a series of different symptoms and imbalances, and I cut gluten out of my diet.** 😵
While still on the road to healing, I feel like a new human, and I'll never go back. 😎
These bad boys are made without traditional flour, but are not short on taste.
What You'll Need:
1/4 c coconut flour
1/4 c almond meal/flour
1 tsp baking soda
3 eggs
1/2 c unsweetened almond milk, or milk of choice
1/2 c filtered water
1 tsp pure vanilla extract
1 Tbsp coconut oil, melted
Preheat griddle over medium heat.
In a large bowl, mix dry ingredients.
In a small bowl, whisk the eggs. Add other wet ingredients, whisk well.
Combine all ingredients together in the large bowl, mix well.
For each pancake, pour 1/8-1/4 c batter onto skillet. Cook for a few minutes, until bubbles form throughout the ENTIRE top. These are much more fragile than traditional pancakes--don't get all crazy with premature flipping! ;)
Serve with fresh berries, plain Greek yogurt, REAL maple syrup **if it's not expensive, it's not maple syrup. Man up and invest in the goods. Hit up your local farmer's market!**
