Over ripe bananas and dark chocolate chips give this bake just enough sweetness. This is a treat for sure, and a great meal to prepare for a group! Serve with plain Greek yogurt or a couple of scrambled eggs for a protein punch!
What You'll Need:
3 overripe bananas (the browner the better!)
2 c rolled oats
1/2 tsp sea salt
1 tsp baking soda
1 tsp cinnamon
2 c unsweetened almond milk (or your milk of choice)
3 Tbsp coconut oil, melted + some for greasing pan
1 1/4 tsp pure vanilla extract
1/2 c 85% dark chocolate chips
Preheat oven to 350*
Mash bananas in a large bowl. Set aside.
Mix dry ingredients in a medium size bowl. Add wet ingredients and mashed banana. Mix well.
Grease 9x9 baking dish lightly with coconut oil. Pour oatmeal batter into dish. Top with chocolate chips.
Bake for about 40 minutes, or until a toothpick slides out clean.
