Banana Oat Muffins

These gluten free muffins are a hit in our house!  Easy to throw together, and de-lish.

What You'll Need:

4 large eggs, beaten

4 medium ripe bananas, mashed

2 Tbsp coconut oil

1 1/2 c almond flour/almond meal 

1 1/2 c rolled oats 

1 1/2 tsp baking soda

dash sea salt/Himalayan salt 

optional; add 1/2 c raisins, blueberries, dark chocolate chips or chopped apple


Preheat oven to 350*

Mix all ingredients in a large mixing bowl.  

Grease muffin tin, use tin liners, or use a silicone 'tin', our fave!

Pour 1/4 c batter in each muffin cup.

Bake for 18-20 minutes, or until golden brown.


Makes 12 muffins.  Freeze well!
