Chopped Winter Salad

I've been on the hunt for a good kale salad--I've learned the trick is to chop CHOP it up!!  Add brussel sprouts, seasonal fruit, and a ginger spiked dressing, and you're #winning.

What You'll Need:

1 pound brussel sprouts, shaved 

half bunch kale, any variety, chopped

seeds of 1 pomegrante 

1 apple, chopped

1/4 c slivered almonds 

For the dressing:

1 inch piece ginger, minced

1/2 c olive oil

1/2 apple cider vinegar 

2 tsp honey

salt and pepper


Combine fruits and veggies in a large salad bowl.  

Combine dressing ingredients in a jar; shake to mix.

Because of the heartiness of these greens, it holds up well dressed ahead of time--even over night!


Serves 4 as a main; 6 as a side.
