When tomatoes, fresh herbs and cucumbers are in season, you MUST take advantage! This soup comes together in minutes, and is a perfeft cool treat on a hot summer day.

What You'll Need:

4 large tomatoes

2 onions

2 cucumbers, peeled

2 serano peppers

6 cloves garlic 

1/3 c olive oil

1/4 c balsamic vinegar 

1 tsp cumin seed

1 1/2 tsp salt 

1/2 c cilantro, chopped

1 c cherry tomato, halved

With an exception of the cilantro and cherry tomato, combine all ingredients in a large food processor.  Pulse.

Transfer to a large bowl/soup pot.  Stir in fresh cilantro and halved cherry tomatoes.

Serve cold!
