Mushroom Kale Soup

Mushroom and dark greens create a rich savory broth.  Warms the soul. 


What You'll Need:

4 stalks celery, diced

2 carrots, diced

1 red onion, minced 

2 cloves garlic, minced 

1 Tbsp olive oil


1 Tbsp Tamari, soy sauce OR liquid aminos 

1 tsp Himalayan salt

1/2 tsp black pepper 

1 pint mushrooms, any variety, chopped


1 bunch kale, torn from stem

2 cups filtered water 

3 cups veggie broth 

Combine celery, carrot, onion, garlic and olive oil in a soup pot.  Cook until veggies are aromatic.

Add salt, pepper and Tamari, soy sauce OR liquid amino and mushrooms.  Cook for an additional minute, stirring constantly.

Add kale, water and veggie broth.  Bring to a boil, reduce to a simmer and cover.

Cook for 30-60 minutes, allowing flavors to marry! 

Serves 4.
