Ultimate Reset

Curry Roasted Cauliflower

OMG.  You must make this.

What You'll Need:

1 head cauliflower, broken into florets and rinsed 

2 tsp curry power 

2 Tbsp olive oil

salt to taste


Preheat oven to 375*

Whisk together spices and olive oil.

Toss cauliflower to coat.

Pop into oven for 20 minutes, or until it begins to brown.

Serves 2

Coconut Collards

Collard greens are one of those weird things...ya know, the kind of greens that you just don;t know what to do with.  Turns out they are more versatile than I thought, and this dish is to die for.

What You'll Need:

1 large bunch collard greens (any type of greens would honestly work here--think kale, spinach...)

1/2 can FULL FAT coconut milk

Himalayan salt, to taste

Rinse greens.  Tear leaves from rough stem, discarding stem as you go.  

Combine all 3 ingredients in a large frying pan.  Cook on medium heat, stirring often.  Cook for about 4 minutes, or until greens are braised to desired goodness.


Serves 2.  Try it along side rice and beans, or your favorite protein.

Sweet Potato and Roasted Red Pepper Bisque

Super easy. And, another inspired by the Ultimate Reset.

2 medium sweet potatoes
1 red bell pepper, cored and halved
sea salt

2 tsp ginger root, minced
3 tsp olive oil
4 tsp miso paste
2 c veggie broth


Preheat oven to 375*

Rub sweet potatoes with olive oil and sea salt. Poke with a fork & bake for 35 minutes or so. 

10 minutes before potatoes are finished baking, place pepper in the oven to roast, directly on the rack.

Combine all ingredients in a soup pot. Puree using an immersion blender. (Or, place everything in a blender to puree.) 

Heat on low. Serve topped with fresh chives and plain Greek yogurt.


Serves 2.
