Chickpeas with Brussel Sprouts

What do broccoli, cauliflower, Brussels sprouts, kale, cabbage, and bok choy have in common?

They're all members of the cruciferous family of vegetables. They all contain phytochemicals, vitamins and minerals, and fiber that are important to our health.  Get your dose of these in with this amazing dish--perfect as a vegetarian main or on the side of your favorite protein! 

What You'll Need:

1 pound brussel sprouts, quartered 

1 medium onion, diced 

3 garlic cloves, peeled and smashed

1/2 c veggie broth

1 can chickpeas, drained and rinsed

juice of 1 lemon

olive oil

salt, pepper, red pepper flakes--to taste


Preheat oven to 400*

Arrange prepared Brussels and garlic on a large baking sheet.  Drizzle with olive oil, salt, pepper.  Bake for 15 minutes.

Meanwhile, saute onion in olive oil until aromatic.  

Add veggie broth, roasted Brussels, chickpeas.  Bring to a boil, reduce to a simmer and cover.  Cook for an additional 5 minutes or so.

Top with lemon juice.  Salt, pepper & crushed red pepper to taste.

Boo-yah.


Serves 2 as a main, 4 as a side.

Vegan Pumpkin Cakes

Vegan, gluten free, autumn inspired pancakes. Look out y'all, I'm getting crunchier by the minute.  But seriously, these are to die for.  

What You'll Need:

1/4 c ground flax

1/2 c water

1 c rolled oats, separated 

1 tsp baking soda

2 tsp cinnamon 

1/2 tsp nutmeg 

1 Tbsp pure vanilla extract 

1/2 c pumpkin puree, roasted or canned

1/2 c unsweetened almond milk, or milk of choice

1/4 c real maple syrup

coconut oil


Prepare a flax "egg" by combining ground flax and water.  Set aside.  

Grind about half of the rolled oats in a small food processor or blender to create oat flour.  

Combine dry ingredients in a large bowl.  Mix well, and add wet ingredients, including flax egg.

Heat a frying pan or skillet to medium heat with coconut oil.  Spoon 1/4 c sized cakes onto greased surface.* 

Top with whatever your heart desires--think fresh fruit, more maple syrup, nuts/seeds, yogurt...!

*These will not bubble like traditional pancakes--cook for about 3-4 minutes before flipping!

Curry Roasted Cauliflower

OMG.  You must make this.

What You'll Need:

1 head cauliflower, broken into florets and rinsed 

2 tsp curry power 

2 Tbsp olive oil

salt to taste

Preheat oven to 375*

Whisk together spices and olive oil.

Toss cauliflower to coat.

Pop into oven for 20 minutes, or until it begins to brown.
