Vegan Pumpkin Custard

It's what you do when you find a lone can of pumpkin in the pantry!

What you'll need:

1 block silken tofu
1 can pumpkin puree
1/4 c raw honey
1 tsp pure vanilla extract
1 1/2 tsp cinnamon
3/4 tsp ground ginger
1/4 ground nutmeg
1/4 tsp ground clove

Combine all ingredients in a food processor & puree until smooth. Top with unsweetened coconut or dark chocolate chips for the win.
